Once you've opened the bottle, drink it or sink it, as you would with wine. Don't keep a bottle in the fridge hoping it'll last. If you're not going to get through a big bottle, look for the half-size ones. At least in Japan, this is not considered true. It is not uncommon for people to keep bottles at their favorite restaurants - when you can spend $300+ on a bottle on nihonshu (which is I think what we are talking about here), it's a bit nice not to have to drink it all at once, and keeping it very, very cold seems to preserve it quite well.

I've known people to keep bottles of scotch or something at a bar, but never Nihonshu. It may be possible, I guess, but I've never seen it.

There are a couple izakaya here in California that will keep unfinished bottles of sake for the regulars. Of course these bottles are rarely kept for very long since most regulars will finish the bottle (or two) on their next trip. I don't know if this is common practice or not, but it is fairly common around here.
edit: when I say "izakaya" I am referring to the small, hole-in-the-wall type sake bars where the employees speak very little english and the customers are usually under 5'7". ;D

Noble Cousins! Greetings from Solveig! I have to chime in with a me-to on this one. I've known people to keep bottles of scotch or something at a bar, but never Nihonshu. It may be possible, I guess, but I've never seen it. One thing that you you will see at just about any "snack" establishment or similar "watering hole" in Tokyo is a collection of whisky bottles each of which belongs to a regular customer. And yes, these do belong to different regulars. You will, for example, see row upon row of identical Nikka bottles.

I got given a bottle of Haiku Gekkeikan Sake at May Tourney out here in Thor's Mountain. VERY tasty. When I was younger, however, someone gave me a generic bottle of Sake that tasted truly foul. Not sure why. However this was, at lest to my uncultured tastebuds, very smooth and had a pleasant aroma as well as the taste. Oh, and the frosted green bottle is now in hiding so I can use it for some other odd purpose in life.
