At our house, we usually use about 1 cup/person + 1 cup. I usually do a minimum of 3 cups of rice because our rice cooker just doesn't mark for much lower than that, but I would try a single cup to start--make sure you have it in a big enough container, though. We tend to make a little more than we need, considering we buy rice in 25~50 lb bags.
Regarding washing and soaking--I wash, but don't usually soak. That's the way I learned it while I was in Japan, so that's been my M.O. since.

And if there's leftover rice -- you can always take the excess out of the rice cooker after dinner and make an onigiri or musubi or two. That's what I have always done.

These days washing the rice has to do with texture and, to a lesser extent, flavor. However, I hear that back in the day they put all sorts of things in the rice. Talc! Nasty.
Kasan always said to wash it at least three times until the water is clear and make sure you soak it before cooking, but she's a little anal.
If washing REALLY is not your thing, why not buy the type of rice that is certified not to need to be washed? I bought it a while ago and it worked like a charm.

We got this model from Target for $14.99: www.target.com/Rival-6-cup-Rice-Cooker-RC61/dp/B000ETXV94/ref=sc_ri_4/601-8439890-3549740It has been quite serviceable for two people, eating rice a couple of times a week for about a year now and still going strong. It makes 6 cups, so we usually have lots of leftovers. Aside from making plain rice (which we sometimes turn into fried rice), I also use it to make Spanish Rice (add a can of tomatoes with green chilis as part of the liquid and spice to taste) and herbal-infused rices. Edited to add: although it makes 6 cups, we usually only make two cups at a time. That's a lot of rice!

Thanks all! I've been cooking my rice in a plexiglass container in the microwave. I'm not quite sure how much water to use to lately, I've been getting "rice mush" that is just a tad to moist to be nice sticky rice but I know if I nuked it for one minute more, I get rice hard enough to resole shoes. Eventually, the rice mush, if left out, demushifies but I'm not there yet.... (;
