too bad i'm west of mississippi No Asian markets where you live? I am west of the Mississippi, and I've seen these at the Korean grocery in town. I didn't realize these were Kabocha (It never dawned on me to find out what they look like). Whole Foods may also sell them if you've got one near you.

Like I mentioned, if you've got a Whole Foods or Trader Joe's nearby, try there (Yes, I understand that those stores aren't found everywhere). You might be able to find buttercup squash, which is a Kabocha type squash. Others that are similar are Black Forest, Hokkaido (Red Kurd), and Honey Delight.

Exactly! Most squashes benefit from this kind of treatment. That's similar to the way my family makes turnips for Thanksgiving (except it's cube and boil, then season with salt, pepper, butter and a small handful of brown sugar).

Sage goes very well with squash.

Even so, variety is the spice of life. I'm an omnivore and proud of it. I subscribe to the 'when in Rome' theory. There are very few things that I won't try; the only exception really is I wouldn't eat cat or dog, even if I was in a country where that was a delicacy. It's not that I'm grossed out by it or offended, I just can't eat a companion animal in good faith. Anyways, back to pumpkins, squash, gourds and the like. All hail the kabocha!
