Wondering what use there is for vinagar in Japanes cooking... I just started a temp job and there is a bit of extra product with a help yourself policy... Usualy partial or broken boxes. The Marsala wine and Balsalmic vinagar is fairly self explanitory. The Nakano rice wine vinagar I don't realy have any ideas.

Rice vinegar is an ingredient of sushi rice. It's also used in some tsukemono (Japanese pickles).

Greetings from Solveig! Vinegar also appears as a condiment in some depictions of pre-modern Japanese feasts. It is also an ingredient in sunomo and shows up in various other places as well as a seasoning.

I got on a sunomono kick recently, after having a nice cucumber salad at my favorite Japanese restaurant in town. There are a number of variant recipes on the internet, but you can dress any raw vegetable or even chilled crab or shrimp with a bit of rice vinegar seasoned with a little salt, sugar, perhaps a splash of soy sauce or dashi. I put together a cucumber sunomono in camp in about five minutes with vinegar, sugar and a shot of furikake (it was what I had in my camp box) and it still resulted in a nice flavor - definitely one of those "mix to taste" types of concoctions, but it makes a lovely light lunch on a warm day.
