I know the norm was for it to be black, but if the main colour of the plates was say red, did it sometimes match it?

I want to say "yes". I know I've seen it done with red armor, but I am not sure if that was post-1600 or not. The big problem that I suspect you will have is that the color will likely rub off over time and use, given the amount of metal-on-metal contact that you have with maille, combined with movement.

Absoluteley. Go crazy and put gold maille to red plates if you want. I've seen some wacky Edo period examples of this. But, if you want to go for the more refined look, try and keep it simple; black maille to black plates, red maille to red plates, gold maille to gold plates, etc.

You can not say "never" when it comes to Japanese armor and I have seen one red karuta zukin with red kusari (mail armor) but it was extremely rare for any armor to have any color other than black kusari no matter the color of the plate, even when it was red or gold.
